Bio: Tim Gavan got the food knowledge by osmosis. Growing up in a family of good, innovative cooks (Lillian, Kathleen, Jane, Louisa and Rachel – John did great scrambled eggs and Margaret cooked for 9 kids and then 90 later on) he was the eldest and only boy with three sisters. Hence – he never lifted a finger in the kitchen. The food in Australia in the 1970’s was pretty average. Kate was adventurous and she and John went eating at strange places – Italian, Greek, Chinese Lebanese places and befriended the natives. They shared their secrets and Kate started to make them, Lillian baked – the girls helped and Tim…ate it. When he left home (finally but too soon according to Kate) he fended for himself. Slowly he taught himself to cook when he discovered the joy of making others happy through food. The fact that it was always fresh and local was an accident – he loved the fish markets and eventually married a chick who grew stuff. He has never stopped pushing the boundaries, sourcing, scouring the land and markets, talking, listening, reading and practicing. Acquiring good knives, tools, machines, ideas and dreams. Oh yeah, he used to be fat, now he runs, lost 40kg (88LBS) but still eats – perhaps not as much.
