Chopped Salad With Dijon Vinaigrette

Salad:
- 1 English Cucumber, peeled and chopped (½ inch dice)
- 1 large Beef Steak Tomato, chopped (½ inch dice)
- 1 Red Bell Pepper, chopped (½ inch dice)
- 2 heads of Romaine Lettuce (hearts), cut into eights and then ½ inch slices
- 1 Avocado, cut into ½ inch dice
- 8 oz feta cheese
Vinaigrette:
- ½ tsp. Dijon Mustard
- 3-4 tbsp. Olive Oil
- 1 tbsp. Red Wine Vinegar
- 1 small Shallot, finely diced
- 1 tsp. Kosher Salt
- ½ tsp. freshly ground Pepper
Procedure
Wisk together ingredients for the vinaigrette in a small mixing bowl. Whisk until combined-the dijon mustard will act as an emulsifier and the vinaigrette will not separate.
Divide all salad ingredients, except the cheese, among 6 salad bowls and drizzle with the vinaigrette. Crumble the feta cheese and divide among the 6 salad bowls.
