  • 1 Tbs butter
  • 1 small red onion, ¼” dice
  • 1 head of roasted garlic, cloves squeezed
  • 1 cup dry white wine
  • 3 cups of heavy cream
  • Kosher salt
  • Freshly ground black pepper

This roasted garlic sauce recipe is great with the sweet corn tamales. It would be great on chicken and shrimp too!



Heat the butter in a medium saucepan over medium-high heat. Once the butter stops foaming, add the onions and season lightly with salt. Reduce heat to medium and cook until onion is translucent and soft. Add the garlic and wine. Turn the heat on high and cook until almost dry. Add the cream and reduce by half, about 20 minutes. Let cool slightly, transfer to a blender, and blend until smooth. Strain and check for seasoning, adding salt and pepper as required. Re-heat before service.
