Spaghetti and Meat Sauce

- 1.5 Pounds Ground Beef-80/20
- ½ Onion, ¾ inch dice
- 2 Medium Carrot peeled, 3/8 inch dice
- 2 Medium Celery, 3/8 inch dice
- 5 Garlic Cloves, minced
- 3 Tbsp of Tomato Paste
- 1 Cup of Dry Red Wine (cabernet works)
- ½ Cup of Milk
- 28 oz can of Crushed Tomatoes
- 2 Bay Leaves
- ¼ Cup Brown Sugar
- Pinch Red Pepper Flakes
- Salt and Pepper
- 2 Tbsp Oil, divided
- Grated Parmesan Cheese for sprinkling over completed dish
- 1 lb thin Spaghetti (we like Barilla)
This spaghetti and meat sauce recipe is going to be a hit with your family at the next Sunday dinner! A rich and savory meat sauce that can be used as it is here over pasta, or as a filling for meat lasagna.
FOR THE SAUCE
Heat 1 Tbsp olive oil in a heavy large saucepan over medium heat. Add onion, carrot, celery and garlic; add a couple pinches of salt to allow the moisture from the vegetables to release. Sauté until soft and slightly colored and cooked through. Remove from pan to a bowl.
Add 1 Tbsp olive to same pan. When the olive oil is up to temperature add the meat and brown while breaking up the meat, into very small pieces, with the back of your spoon. Add a couple of pinches of salt and a few twists of the pepper grinder at this point. When the meat mixture is cooked thru, drain the fat from the pan. Raise the heat to high and add the tomato paste and cook for 2-3 minutes. Add the sautéed vegetables back to the pan. Add the red wine and cook until dry. Add the remaining ingredients and simmer, uncovered, until sauce is a fairly thick, stirring occasionally. This may take up to 2 hours. Taste and adjust seasoning as needed.
FOR THE PASTA
Bring a large pot of water to a boil, add x salt. Add pasta and once it is bendy, use tongs to get all of the pasta under the water. Cook pasta according to timing directions on package. You will need to check the doneness of the pasta about a minute before the time is up. The best pasta has a little toothsome bite to it right in the center. If your pasta is mushy or cooked all the way through, it is generally thought to be overdone. Drain pasta in a colander and shake out thoroughly so there is no water left.
Serve pasta with sauce spooned over the top and a few tablespoons of parmesan cheese on top. Delicious!
