These easy to make and beautiful tarts are a nice light dessert on a hot summer day. Pick peaches that aren’t too ripe as the slightly under ripe peaches will be easier to peel!

A favorite Mexican dish of mine! The sauce is a little time consuming but well worth the effort as the dried Ancho lends a depth of flavor to the enchiladas that dried chile powders cant. Leftover roasted chicken would be a great way to repurpose last nights dinner.

Smokey, spicy, and sweet; this sauce is a natural with chicken. The pureed chipotle gives a beautiful spicy kick and provide a real depth of flavor. Be careful not to fry the garlic for too long. A caramely sauce with a slight kick at the end. I like to use Jack Daniels even though its not a bourbon-the flavor it imparts to the sauce is second to none! You can use your favorite bourbon if you prefer. I have found that Makers Mark will produce excellent results also.
