A colorful slaw that is perfect for any barbecue. Crunchy and tangy, this cole slaw is always a favorite in the summer time. For more of a bite, use white vinegar in place of the apple cider vinegar. Best if made at least 3-4 hours ahead. Celery seed can be added for another level of flavor.

A favorite Mexican dish of mine! The sauce is a little time consuming but well worth the effort as the dried Ancho lends a depth of flavor to the enchiladas that dried chile powders cant. Leftover roasted chicken would be a great way to repurpose last nights dinner.

A great weeknight dinner. A true one-pot wonder. This chili is also very good if you decide to make it with ground turkey for a healthier version. Although the chili will taste very good if only cooked for the time allotted in the recipe-if you have the time-an additional 20 minutes of cooking will really bring out all of the flavors of this dish!

This dish got its beginnings as a beef stroganoff recipe given to me by my Mom…I decided that I would add some brandy and chicken thighs to it and this is the result. A luxurious weeknight dish that tastes like it took hours to make! Don’t be shy with the lemon and the salt at the end of the cooking-the sauce can really stand up to a strong hand with the seasoning.
