This tasty chicken dish is perfect for a light mid-week meal. With the salty, sweet and spicy
flavors of this dish, you would never know it is easy on your waistline! The big, bold flavors of
the salsa really compliment the marinade! Pairs perfectly with rice and a nice chopped salad.

Procedure FOR THE TILAPIA Sprinkle fillets with salt and ground peppercorns on the flesh side. Melt 1 tablespoon butter and I tablespoon of the canola in large nonstick skillet over medium-high heat. Add fillets, making sure to press on the fish with your spatula while it is cooking. Cook until browned-flesh should be crispy at this point, 2 to 3 minutes. Turn fillets over; cook until opaque in center and slightly browned, 2 to 3 minutes. Transfer to plates; cover […]

A delicious surprise. These fries are very easy to make, and are also a very healthy substitute for french fries. Sweet and salty, they pair well with chicken, beef or pork.

These potatoes make a fantastic side for steak or chicken. We start by boiling potatoes until cooked, and then fry them for a crunchy exterior and creamy inside. Use Red Bliss or Yukon Gold for best results as Russets have too much starch and will break apart when you try to flatten them!

A great weeknight dinner. A true one-pot wonder. This chili is also very good if you decide to make it with ground turkey for a healthier version. Although the chili will taste very good if only cooked for the time allotted in the recipe-if you have the time-an additional 20 minutes of cooking will really bring out all of the flavors of this dish!

This dish got its beginnings as a beef stroganoff recipe given to me by my Mom…I decided that I would add some brandy and chicken thighs to it and this is the result. A luxurious weeknight dish that tastes like it took hours to make! Don’t be shy with the lemon and the salt at the end of the cooking-the sauce can really stand up to a strong hand with the seasoning.

A great side with steak or chicken. The whole house will smell of the warm fragrance of cumin and curry. If curry is not your bag, then omit it. This dish is also excellent with a little freshly grated parmesan cheese sprinkled on the cauliflower the last 5 minutes of roasting.

Haricot vert is a nice choice here, but the bigger American version works just as well. This is a delicious side that goes well with practically any dinner. Great for a quick weeknight side dish that everyone will love.

These grilled morsels are a favorite of mine; sort of an asparagus Caesar salad, if you will. The parmesan and lemon juice play well together with the chargrilled asparagus.
