- One 16 oz. container Greek Yoghurt- full fat (we like Fage)
- 1 Large Garlic Clove-made into paste
- 3-4 Tbsp of finely chopped Fresh Mint
- 1 Large Cucumber, seeded and cut into 3/8 inch dice
- Kosher Salt
Place the diced cucumber in a strainer with a teaspoon of the salt. Generously stir to coat the cucumber with plenty of salt and place the colander over a mixing bowl. This process will drain out to the moisture from the cucumber and will prevent the Tzatziki from becoming runny. Once the cucumber has given up its moisture about 30 minutes- rinse and drain.
In a medium mixing bowl, using a rubber spatula, combine yoghurt, garlic paste, mint sauce and a pinch of salt. Stir until combined very well. Taste and adjust the seasoning with salt if needed. Be careful with seasoning- salt and garlic can creep up on you!
Best made the day before, keeps in the fridge for 3-4 days
