Who doesn’t love an Asian noodles with peanut sauce recipe? This dish is delicious served hot or cold and makes a fantastic weeknight side or nice dish for lunch.
Difficulty: Beginner Preparation Time: 10min
Yields: 4-6 Servings Total Time: 20min
Ingredients:
1 package of Asian egg noodles (check the Asian aisle at your store)
½ cup of creamy peanut butter (I prefer a natural peanut butter such as Smuckers)
2 Tbs. light soy sauce
2 Tbs. rice wine vinegar
1 Tbs. honey
2 Tbs. water
1 tsp. hoisin
½ cup peanuts, chopped
½ cilantro, chopped
Optional:
½ red pepper, ¼”dice
1 carrot, ¼”dice
Procedure:
FOR THE SAUCE
In a medium mixing bowl combine the peanut butter, soy, vinegar, honey, water and hoisin and whisk until combined and smooth
FOR THE NOODLES
In a 4-6 quart pot bring heavily salted water to a boil and cook noodles as per directions on box or package.
When noodles are done cooking, strain and colander and put back in the pot. Add peanut sauce while noodles are hot and toss to coat. Let cool slightly, add cilantro and toss again. When serving the noodles, sprinkle with the chopped peanuts and if desired the red pepper and carrot.
