Chopped Salad With Dijon Vinaigrette

Yields: 4-6 Servings Total Time: 25min


  • 1 English Cucumber, peeled and chopped (½ inch dice)

  • 1 large Beef Steak Tomato, chopped (½ inch dice)

  • 1 Red Bell Pepper, chopped (½ inch dice)

  • 2 heads of Romaine Lettuce (hearts), cut into eights and then ½ inch slices

  • 1 Avocado, cut into ½ inch dice

  • 8 oz feta cheese

  • ½ tsp. Dijon Mustard

  • 3-4 tbsp. Olive Oil

  • 1 tbsp. Red Wine Vinegar

  • 1 small Shallot, finely diced

  • 1 tsp. Kosher Salt

  • ½ tsp. freshly ground Pepper


Wisk together ingredients for the vinaigrette in a small mixing bowl. Whisk until combined-the dijon mustard will act as an emulsifier and the vinaigrette will not separate.

Divide all salad ingredients, except the cheese, among 6 salad bowls and drizzle with the vinaigrette. Crumble the feta cheese and divide among the 6 salad bowls.
