Lamb Burger with Tzatziki Sauce

Ingredients:


  • 2 lb. Ground Lamb

  • 4 Burger Rolls, split

  • Canola Oil

  • Kosher Salt

  • Freshly Ground Pepper

  • 8 oz Feta Cheese, crumbled

  • 1 Tzatziki Sauce recipe


Procedure:


FOR THE BURGERS

Bring grilled lamb up to room temperature. Form into 4-¾ inch thick patties. Taking care not to handle the lamb too much. Place patties on a platter and using your thumb, make a 1” diameter indentation in the middle of each patty. This will help prevent the center of the burger from puffing up while grilling. Generously season each burger with salt and pepper.

Place burgers on a grill that has been preheated to med-high temperature. Don’t forget to oil the grates just prior to putting the burgers on the grill. Grill burgers for 4 minutes then flip and grill for an additional four minutes for a medium rare burger. Transfer the burgers to a platter and toast the split buns until golden brown and crusty. About 30 seconds to one minute. Place a burger on the bottom bun and top with about ¼ to 1/3 cup of the tzatziki. Sprinkle with the feta. Repeat with the other burgers.
