My riff on my Mothers oatmeal cookies-so delicious. For whatever reason I really seem to enjoy these cookies around the Christmas holiday, but they can be enjoyed all year round.

Yields: 32 Cookies Total Time: 30min
Ingredients
2 Cups Unsalted Butter room temp.
1 Cup Brown Sugar
½ Cup White Sugar
2 Cups White Chocolate Chips
2 Cups Dried Cranberries
2 Large Eggs
1 tsp Vanilla Extract
2 Cups Old Fashioned Oats
1 ½ Cups All Purpose Flour
1 tsp Baking Soda
1 tsp Sea Salt
Procedure:
Preheat oven to 375F.
In a stand mixer cream together the butter and the brown and white sugars until fluffy and creamy, 3-5 minutes. Add the eggs one at a time once the butter and sugar are creamed. In a separate mixing bowl combine the oats, flour, baking soda and salt. Add the flour mixture to the butter mixture in several additions. Stir in chocolate, cranberries.
Drop by rounded tablespoonfuls onto ungreased cookie sheets lined with parchment paper of baking pats. Bake for 14 minutes, rotating halfway through baking. Cool on a wire rack.
