Rum Tiki

A martini with a tropical twist. A great drink to have after a long day at the beach. The Rum Tiki recipe is a favorite summertime drink and always a hit at my parties.



Difficulty: Beginner Preparation Time: 1min

Yields: 2 Servings Total Time: 2min


Ingredients

  • 6 oz White Rum (Bacardi is fine choice here)

  • 1 oz Coco Lopez (sweetened coconut milk)

  • 3 oz Pineapple Juice

  • Juice of 1 Lime

  • Ice

  • 2 Chilled Martini Glasses

  • 1 Metal Shaker with Lid


Procedure:


FOR THE RUM TIKI

Fill the shaker to the top with ice.

Pour in the rum, Coco Lopez, the pineapple juice and the lime juice into the shaker.

Place top firmly on shaker and shake vigorously for 30-45 seconds

Pour martini into the chilled, glass and enjoy!
